Meat from mobile truck turned brown and shrunk after thawing

I bought meat from this mobile truck operation. The guy called me from (253) 397-6660 and I think they are based out of Buckley, WA. I paid $486.19 for it.

The meat looked fine when it was frozen. But once I thawed it out it was brown and like half the size it was frozen. I think they inject it with water and plum juice to make it look decent while frozen. Because soon as it thaws it's just not the same. I feel like I got ripped off pretty bad.
